Italian Red Potatoes

This is a quick fix tasty side dish.

  • 2 1/2 lbs red potatoes, cut into 1-inch chunks

  • 4 Tbsp Italian Dressing

  • Garlic Salt

  • Grounded Black Pepper

Preheat oven to 400 degrees.

Cover potatoes with 3 Tbsp of Italian Dressing, reserve 1 Tbsp for coating the potatoes later.

Place the coated potatoes onto a greased sheet baking pan. Spread out in one layer. Sprinkle with garlic salt and grounded black pepper. Cover the potatoes with tin foil. Bake for 30 minutes, then remove baking sheet of potatoes from the oven. With a basting brush coat the potatoes with remaining Italian Dressing. Continue baking without tin foil for 10 to 15 more minutes until potatoes are golden brown.


I served these red potatoes with the Pioneer Woman's Meatloaf and steamed California Vegetables.
