Egg Salad


6 hard boiled eggs

5 tablespoons mayonnaise

1 tablespoon Dijon mustard

2 tablespoons pickle relish

1 teaspoon white balsamic vinegar

¼ teaspoon paprika

salt, to taste

pepper, to taste

Optional Ingredients

fresh chives, minced, for garnish


Peel the hard boiled eggs, and cut them in half.

Remove the yolks, and set them aside.

Chop the egg whites into bite-size pieces, and set them aside.

In a medium-sized bowl, combine the yolks with the mayonnaise, Dijon mustard, pickle relish, white balsamic vinegar, and paprika.

Mash the ingredients together with a fork until the mixture is mostly smooth. (Some lumps are good.)

Add the egg whites to the yolk mixture, and combine.

Add salt and pepper to taste.

Serve this deviled egg salad garnished with fresh chives.
